Ms. Waters had agreed to spend a hot September day shopping with me at the Union Square Greenmarket and schlepping back to my first-floor apartment in brownstone Brooklyn to make lunch.

The menu was dictated by two things: the market's offerings and the recipes in her forthcoming book, "The Art of Simple Food: Notes, Lessons and Recipes From a Delicious Revolution" (Clarkson Potter, October).

Start your on GREEN MARKET.
Go to the local veggie supply warehouse and buy 20 or 30 of each item they have then go to the market place and PRETEND YOU HAVE A FARM. You can Make 40% to 60% profit on what you sell and eat what you don't.

Ms. Waters is my heroine. I've loved and learned from every one of her recipes. Will never forget the first time I saw her on television making salads with Julia Child.
