Listen up people, this is important. Pancakes matter. As a type II diabetic, I thought pancakes were lost to me, until the new sugar free syrups that actually taste ok, came on the market. Now, if you use less refined flour in your pancake, you're really cookin." There is a restaurant in the land of corn, Reynoldsburg, Ohio (Tee Jayes's, on Brice St.) that serves corn meal pancakes. Oh man they are good. Now, IHop is serving them too. To make them at home, just add some corn meal or polenta to the batter. OK, OK, so this ain't high cuisine. It's high comfort food.
