Thanksgiving Dark Dense Pear Bread

2 cups whole wheat pastry flour
1/4 tsp baking powder
2 c. finely shredded ripe pears*
1 3/4 cups light brown sugar
1 cup oil
1 tsp salt
5 eggs
1 tsp spice mix**
2 tsp vanilla paste
3 tablespoons cinnamon
1 tsp baking soda
1/3 cup strongly brewed black tea

Combine flour, soda, baking powder, salt and cinnamon in a large bowl. Make a well in center of mixture. Combine oil, eggs, sugar, pears, nuts and vanilla. Add to dry ingredients, stirring just until moistened. Spoon mixture into one tube pan or 2 greased 8 1/2 x 4 1/2 x 3 inch loaf pans. Bake at 325 degrees for 50 minutes in the tube pan, 1 hour and 10 minutes in the loaf pans, or until done. Cool 10 minutes before removing from pans.

* About 8 small or 5 medium pears
**Spice mix: combine 1/4 tsp each: cinnamon, allspice and ginger. Add a dash of nutmeg or mace.
