Potbelly Launches New Sandwich

Potbelly Sandwich Works LLC has found success in keeping its menu simple and uncluttered. Now, with its first sandwich tweak in at least five years, it's sampling a new strategy.

The clubby -- with ham, turkey, bacon, provolone cheese and ranch dressing -- has 30% more meat than Potbelly's 11 other sandwiches and a higher price to match: $5.39, compared with $4.19.

"This allows them to continue to compete with the $5 sandwiches you see at Subway and Quiznos stacked high with meat," says Darren Tristano, an executive vice-president at Chicago restaurant consultancy Technomic Inc. "They can offer a heartier sandwich without moving far away from their simplified sandwich offerings they are known for."
