I Like ItI Don’t Like It

I ate something similar to this in a restaurant and it was glorious, so I came up with a home version. This is an entree but in the restaurant I had a double serving as a main course it was so good. Man, I am having so much fun - cooking is one of the very few things I am really good at!

Ingredients:
Goat cheese
Pancetta or lean bacon
Fresh thyme or rosemary

Directions:
Cut the goat cheese into 1 inch chunks and wrap in pancetta or extra lean bacon all around. Secure with toothpicks and brush with plain oil. I put a sprig of fresh thyme or rosemary on mine, I prefer the thyme.

Bake in 350 degree oven for about 15 minutes until the bacon is cooked through and cheese is melty. I bet this recipe could be adapted for other "gritty" textured cheeses.
