Thanksgiving Recipe: Johnny Appleseed Cake With Caramel Sauce

A new one this year....and it's goooood.

1 1/4 cup all purpose flour
1 cup whole wheat flour
3/4 cup sugar
3/4 cup brown sugar, firmly packed
1 tablespoon cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/4 teaspoon curry powder
1/2 cup water
3/4 cup vegetable oil
3 eggs, slightly beaten
2 teaspoons vanilla
2 large tart cooking apples cut in 1/2 inch cubes
3/4 cup walnuts or pecans, finely chopped

1 cup brown sugar, firmly packed
1/2 cup whipping cream
3 tablespoons butter
1 teaspoon vanilla

Preheat Oven: 350. In large mixer bowl, combine flour, whole-wheat flour, sugar, 3/4 cup brown sugar, cinnamon, baking powder, salt, nutmeg, baking soda and curry powder. Whisk together well. Add water, oil, eggs and 2 teaspoons vanilla. Beat at medium speed, scraping bowl often, 1 to 2 minutes or till well mixed. Stir in apples and nuts by hand. Spread into greased and floured 13 X 9 baking pan. Bake for 40-45 min, or until top springs back when touched lightly in center. Cool completely.

In small saucepan, combine 1 cup brown sugar, whipping cream and butter. Cook over medium heat, stirring constantly, until sugar is dissolved (3-4 min) Stir in vanilla. Drizzle sauce over each piece of cake just before serving. dollop with whipped cream if desired.

Makes 15 servings.
