Thanksgiving

During the presidential campaign, Obama said that sweet potato pie was his favorite. So, on election night, before any returns came in (we're on the East Coast), we made a sweet potato pie for a good luck dessert. It was DELICIOUS (and the good luck worked!). Here is the recipe we used:

Ingredients:
1 pound sweet potatoes
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk
2 eggs
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
1 9-inch unbaked pie crust

Directions:
Boil sweet potato whole in skin until soft when poked with fork (40 to 50 minutes for 1 large sweet potato or 20-25 minutes for group of smaller ones). Run cold water over cooked potatoes, remove skin, and place in large mixer bowl.

Preheat oven to 350.

Mash cooked potato and beat with softened butter until combined. Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla. Beat on medium speed until smooth. Pour into unbaked pie shell.

Bake in preheated oven for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a soufflé, and then sink down as it cools.

Serve warm or at room temperature with vanilla ice cream or whipped cream.

True Southern Sweet Potato Pie only has baked sweet potatoes (4 or 5 small to medium), peeled and mashed with 1/2 stick soft real butter, 1/2 cup white sugar and 1 to 2 teaspoons real vanilla. Mix well and put in a uncooked pie crust and bake for 20-30 minutes.

My Grandmother never had a written recipe for the pie. But, the Christmas before she died, she had me watch her make the pie and write down the recipe. I always think of that time with her when I make it each year.

Ok so the boiling and peeling of sweet potatoes sounds like way too much work (though certainly yummy) but I am seriously considering serving up the turkey using the Sarah Palin turkey recipe.

I got two of these pies in the oven...substituted the milk with eggnog and added chopped walnuts...YUM! Too much work...it Thanksgiving! And people say WE aren't family!

Try substituting canned evaported milk or light cream (plus and extra Tsp or two) for the whole milk. Mo' fattening, but it makes the pie even lighter. This is a tip from an old African-American friend, and your recipe is exactly the same as hers, with the exception I noted.

I normally make either a basic pumpkin pie or butterscotch pie, but this year I already printed the recipe for sweet potato pie. It's so funny to know that it's Barack's favorite! I can't wait to make it now!

My family recipe is for 2 pies, one is never enough, break it down if you need to:
my family settled in st louis , mo area in 40's but hail from Arkansas

Sweet Potato Pie

Boil 2 large sweet potatoes or 4-6 small potatoes, set aside to cool, peel and mash
with a fork and be ready to add other ingredients

add dry ingredients first: 1/2 t. nutmeg, 1/2 t. cinnamon, 1/4 t. ground ginger (or this can be substituted with 2 t. of allspice. add 1/4 t. salt (optional), 1/2 cup of packed brown sugar,
1 cup granulated sugar

add 2 t. vanilla extract, blend all this well

beat 4 eggs in a separate bowl, have one can of evaporated milk ready to pour

add eggs and milk gradually to dry mixture, blend well until smooth

Bake in uncooked pie shells at 400 degrees for 10-15 min to brown crust, lower temp to 300 degrees and bake for 40 min or until set, will rise and fall flat, check with toothpick or fork until it comes out clean

it's a little more work, a lot more pie and very much worth it, ENJOY
