Favorite Recipe (Spiedies) combined with best charcoal (Ono).

Speidies - Marinated meats on a skewer that come from northern upstate NY region.
5 lbs Lamb, Chicken or Pork (Cut into chunks)
3 c. olive oil
1 c. red wine vinegar
1 1/2 cup red wine
2 lemons juiced
2 tsp. parsley
2 tsp. basil
2 tsp. oregano
2 tsp. rosemary
1 tsp. salt
1 tsp. pepper
2 c. fresh mint leaves chopped
5 cloves garlic chopped

*Save some sauce on side for extra marinade for sandwich.

Combine all ingredients. Marinate meat for 24 - 72 hours or more. Grill skewers on habachi with Ono charcoal. This style charcoal gives the meat an enhanced flavor like no others we have tried. The smell will invite friends from a far. Serve on slices of Italian Bread.

I won't be cooking out this year because we don't have the money for anything, but I know a few little tasty tricks to spruce up some Bar-B-Que favorites...

* Combine a regular size bottle of Heinz 57 sauce (6 oz. ?) with a 1/4 to 1/2 half average sized jar of Honey (any honey will do). Mix well and baste turkey & chicken with it. Add this about 10 minutes before meat is ready and cover. Yummy!

* Sprinkle grilled corn on the cob with "Old Bay" seafood seasoning. NOT a whole lot unless you like it spicy.

* Add honey, bar-b-que sauce and pineapple chunks to any kind of plain ol' baked beans. Kids will lick the plate (adults will too!).

* For yellow or white cake, add 7-Up soda instead of water. Makes it moist and gives it a distinct sweetness.

* Cut a long watermelon in half, lengthwise. Scoop out watermelon balls with a small scoop. This works best with a cold watermelon. Mix balls with other added fruit, ie, grapes, orange slices, apple wedges, pineapple, whatever, add to gutted watermelon shell. Refrigerate. Do this with both halves and you'll have enough cold fruit for your party. It will get eaten in shorter time than it took you to make it, but everyone will love it, and it's healthy.

Maple Salmon

Marinate salmon filets (or steaks) in mixture of equal parts real maple syrup and light soy sauce (I use Kikkoman Sushi and Sashimi) for about 1/2 hour.

Remove from marinade and grill on high for about 5 min a side (depends on thickness), basting with the marinade.

Super-simple, absolutely delicious.

BBQ Western Pork Rib (Boneless Cuts)

(Hey, it's simple...it's tasty...and not a lot of fuss).

Take fresh Western Pork Rib Boneless Cut (4 lbs.)
Place in a microwaveable rectangular casserole dish.
Smother with Baby Rays Honey Barbecue Sauce.*
Cover entire dish with saran wrap.
Set cooking time to 35 minutes on power level 3.
When finished, place the ribs in preheated covered grill... continually turn and baste (with Baby Rays Honey Barbecue sauce) on lowest heat level.
Check meat with a sharp knife (or temp thermometer), seeing that the meat is fully cooked.

For sides:

Fresh Corn On The Cob:
Soak the corn in water (in the husk) for at least one hour. Place on low heated covered grill, turning every 15 minutes until done.

Grilled Baked Potatoes:
Take potatoes, wash thoroughly and slather them with butter (or margarine). Sprinkle freely with course sea-salt. Wrap them with two layers of foil, and cook on covered grill on high heat. (approximately 40 to 50 minutes) turning them every 15 minutes. Use a sharp fork to check that potatoes are done by piercing them deeply...and when the fork slides into the potatoes with ease...they are done.

I told you it's easy...and simple.

*By the way...I don't work for (nor am I affiliated with) "Sweet Baby Rays BBQ sauce in any way...LOL

I love Sweet Baby Ray's; first bottled BBQ sauce that I have liked. I add my own fixin's to it, but I use it as a base. I also add it to beans.

Best Burgers

3lbs Ground Beef or Chuck
1TB Coarse Ground Black Pepper
1TB Garlic Powder
1TB Onion Powder
1/2 TB Seasoned Salt
1TB Seasoned Meat Tenderizer

Mixed all ingredients. Refrigerate overnight. Makes 9 5oz burgers. Yummy!

Santa Maria style tri-tip

Select a large tri-tip roast. Remove excess fat and membrane. Wash with cool water and pat dry. Dredge with kosher salt, fresh ground pepper, and garlic powder. Sear on all sides (4) over hot charcoal (preferably oak). Slow cook, covered, over smokey fire until internal temperature reaches 140F. If cooking over gas, use wood chips for smoking stage. Slice diagonally and serve. Cooking time should be a minimum of 2 hours, slower is better.

Meat will appear pink on the outer edges, due to the smoke not because it is undercooked.

Should be served with seasoned pintos and fresh salsa.

Tri Tip is one of my favorite underrated cuts of meat. And this sound like an awesome way to do it. What wood chips would you suggest, Hickory, Mesquite?

Heres a quick and tasty sauce for everyday cooking

1/2 cup onion diced
1 cup ketchup (no-salt if you prefer)
2 Tablespoons yellow mustard
4 Tablespoons brown sugar
1/2 teaspoon dried crushed red pepper
2 teaspoons Worcestershire sauce
1 Tablespoon water
1/2 teaspoon garlic powder

Heat for 2 minutes in sauce pan.

I bbq my tomato sauce - then freeze for future use:

So, for about a pound of tomatoes (whole, uncut) - works for any type - the flavor's depend on the richness of the tomato's pulp

Add
1 large onion, peeled & quartered
1 bell pepper, quartered
1 clove garlic, peeled
2 carrots, chopped
1 stalk celery or bunch of celery tops
handful of mushrooms (chopped Portabello for a wonderful flavor)
handful of fresh basil (stems & leaves-no problem)
some fresh oregano leaves (or dry if you don't grow it)

Add/subtract to your taste

I use a basic Webber w/mesquite
Once coals are going, place along the sides of the bbq (indirect cooking here)
Place foil on the grill, and poke a few holes for the liquid to drain,

Sprinkle foil with olive oil
Put tomatoes on foil, then add rest to make a single layer
Liberally sprinkle with olive oil

(Here's the fun part.)

Just sit and let it simmer - add coals as needed (depends on amount you're cooking)

I usually do at least 5 lbs at a time - it's a weekly affair in the summer.

Check on progress every 1/2 hour - benign neglect is good. Too much peeking just prolongs the process.

Once simmered to you're liking, let it cool at room temp, then blend to juicy chunk consistency.

You will never buy sauce again.

I freeze and store in quart containers - wonderful for quick pasta meals.

One of the most simple and best ways to barbque chicken and steak is to just let them soak in some soy sauce in the plastic baggie for a while or overnight. Simple, easy and tasty.

While ya'll are at the BBQ, you'd need something to drink. If beer is not your thing, try ice cold lemonade with a crushed leaf of fresh basil.

I am here to tell you folks of the Orion Cooker! I have no interest in the company. I just feel it my duty to share with mankind the absolute wonder of this contraption. Food comes out wonderful and you don't have to be a great cook to achieve stunning results. Look it up, I love this thing.

THE PERFECT HEARTLAND BURGER::

Onion salted - then Chargrilled by wifey 10-15 feet away;

Medium rared to finished patty height of 5/8"; Lotsa red/pink trapped in thorough charring.

Sandwiched in fresh wheat bread w/ grilled sweet onions on one side - then lotsa unrefrigerated catsup and touch of unrefrigerated mustard on the other side.

Served outside w/ American potato salad, sweet pickles and fresh cold 1-2% milk.

BURP!!
