We asked, you answered. When we requested your best barbecue recipes on Wednesday, the response was, well, not overwhelming, but it was enthusiastic. So after combing through them carefully--and stopping to eat a snack in the process--we've selected the top ten dishes we hope you'll make this 4th of July.

Slow cooking over a low flame will do wonders for most low end meet cuts. BBQ is slave food, the cuts are cheap, all it takes is time and heat.

Put a sock in it. Go eat a green weed or two.

Some of us eat grass-fed, all natural meats, without the added garbage. We also know to simmer, boil, or slowly roast our meat. In moderation meat is very healthful. Where do you get your zinc and B-12? Not from a plant you don't.

I made the Mississippi Bacon Mayonnaise and then used it on a coleslaw of finely shredded green and red cabbage and a shredded carrot. I think the recipe could use either a 1/2 teaspoon freshly ground black pepper or some Tabasco sauce to taste.

Most food-poisoning cases are from non-meat foods, according to a Time magazine article. Tops: Jalapenos, peanut butter, raw alfalfa sprouts, and cookie dough. Ground beef was in fifth place.

I agree you that we are eating genetically-altered FrankenFood at our own peril.

It is a good idea to minimize the consumption of burned or "blackened" meats AND veggies too. Chemical changes occur while the food undergoes pyrolysis. The chemicals formed can be mutagens and carcinogens. When cooking, it is best to avoid direct flame or wood smoke.

Once I cooked corn on the cob directly on a propane grill. It tasted like soot. Yuck!

From then on, when cooking outdoors, I always lay out a sheet of foil on the grill before putting the food on. It is still high-heat cooking, but doesn't have the awful sooty taste.

Actually, I eat meat in moderation, and at 60, my cholesterol is perfect. Having a good BBQ now and then is absolutely fine for most healthy people, and it's propaganda to state otherwise.

The irony of all these vegan protests is that the US was encouraged to eat more meat during the Great Depression. Since it takes around 10 lbs of grain to make 1 lb of meat, it was a good way to use up excess inventory and get the economy going again.

So it's the vegetarians that are killing the economy.

It is not the vegetarians who are killing the economy. Due to the use of corn as biofuel, pigs now eat McDonalds scraps and metal shavings from gear factories instead of corn and grains. If we were to harness the energy from plastic bottles and yogurt, we would be free to explore space.

I don't know if they are killing the economy, but I do know that by eating genetically modified food in a purer form, they are more exposed to the harmful side effects of GMO's.

I have failed at ribs for years until a buddie gave me the fail proof way.

Just wrap the ribs (baby back) in foil after you season it. Throw it in the oven for three hours at 300 degrees.

Then just take it out of the foil and throw on grill to get the crispy edges (BBQ suace if wanted).

Done.

The best fall off the bone ribs ever.

I suggested boiling ribs before BBQ'ing, and the purists were getting out the pitchforks! But pre-cooking in any form means that ribs are not only cooked thoroughly, but are tender as well. I do finish them up on the grill for the taste.

But I'm keeping an eye out for suspicious crowds with torches and sharp objects walking toward the house!

Cooking the meat on a grill is supposed to caramelize the outside to seal in the juices. Cooking the meat at a very low temp for a long time is how you get the ribs tender without boiling away the flavor. Try indirect heat at about @250-300 degrees for 2-4 hours, depending on the thickness of the ribs. Use a rib rack and center drip pan, with the coals stacked in a circle around the pan. Use sauce after meat has started to pull back from the bone and don't over-do it.

I parboil my ribs too, until just ready to fall off the bone. Then I season them with salt & pepper and "steak rub", or something similar. Then I baste them in my mixture of Heinz57 and honey OR any store brand bar-b-que sauce mixed with honey. Finger-lickin' good!

By the way, if you spray your grill with a non-stick spray, your meats won't stick to it.

Rock Island (IL) Stuffed Tilapia (substitute with any common fish)

8-oz crab meat
2-cups cheese and garlic croutons (crushed)
10-oz prepared Alfredo sauce (or Hollandaise)
1-tbsp fresh lemon juice
2-tsp Old Bay seafood seasoning (more to taste)
6-5 to 6 oz. Tilapia fillets, skin off
3-tbsp melted butter
1-tbsp butter
1/2 cup finely chopped onion
6-oz. lobster meat, chopped
1-can seafood bisque or cream of shrimp soup seafood seasoning, to taste

Fire up the grill (or preheat oven to 350*F)

Crab stuffing: In large bowl, mix crab meat, crushed croutons, onion, Alfredo sauce, lemon juice and Old Bay seafood seasoning. Set aside.

Place the fillets (dark side down) onto a clean surface, cut pockets into each side
Spoon approximately 3/4 cup of the crab stuffing into the pockets
Flatten the stuffing approximately 3/4" high
Gently close the pockets and brush each fillet and the stuffing with melted butter and sprinkle "lightly" with Old Bay
Wrap the stuffed fish in foil and add enough water to cover bottom (or place into a 9 x 13-inch baking dish with ¼ cup of water). Don't pour the water over the fish.

Grill until fish is flaky (or bake in a 350*F oven for approximately 20-25 minutes).

In a small pan, melt 1-tbsp butter over medium heat, add lobster meat and sauté until tender
Add the soup. Stir well.

Serves 6.
