But now scientists for the world's largest chocolatier believe they have stumbled on the holy grail of chocolate: a recipe that is both melt-resistant and low-calorie.

I hope they are paying the High School students who actually invented the no-melt chocolate receipe 15 or so years ago.
I think it was a group of high school students in Pennsylvania. It was all over the news at the time. The Philadelphia Inquirer had an article on 12 grade science class invents no melt chocolate.
They said they were in contact with some Swiss chocolate makers about their invention.
This headline should read: " Big Swiss Company Rips Off Kid's Invention and Claims it for their own".

Hershey invented the melt resistant "Desert Bar" for the first Iraq war in the 90s, this isn't exactly new.

REI sold "tropical" chocolate bars for summer hikers back in the seventies. Took a pretty hot fire to make hot chocolate, but it worked. Hikers weren't as worried about calories then.

The article mentions that the salivary enzymes do the "melting", and they are claiming such a caloric reduction, that I suppose they've replaced the cocoa butter with a type of starch. A good challenge for food chemists and materials scientists, perhaps, but it would be a surprise if it doesn't feel like baked whipped egg whites.
