I've had a vacuum sealer for about 12 years and we are working on our second one. It is the best investment for a household appliance we've ever made. I buy in bulk when meat or cheese is on sale, vacuum seal in serving size portions and refrigerate or freeze. Two weeks ago, I took a bag of blackberries out of the freezer that had been buried under other frozen foods since 2006 and they were as flavorful as when we picked them. The only small appliance I use more than this is my coffee pot.

It's not wasted if you compost. As for meats, if it looks like it might not be consumed before it spoils, just boil it up for a stock - you can never have too much stock on hand - then if that spoils - compost it, it won't attract pests and will spur the micro organisms to heat up your pile, just make sure the pile has about a month after you add any meat,poultry or fish stock (the best IMO).

Those "green bags" they sell in the produce section of some grocery stores (higher end ones) are awesome. And they're reusable many times over.
We get a giant box of veggies every two weeks from our farmer and those green bags help keep stuff fresh that whole time.

In my parent's day, they could *walk* to their neighborhood grocery and buy fresh meats and veggies daily.

In 2009, we must *drive* to the mega-mart to buy "franken-foods," which are probably made out of plastic, anyway.
