Colorado Thanksgiving Recipes: The Centennial State's Top Chefs Submit Their Favorites

Colorado chefs have some great recipes for the Thanksgiving holiday. While some of the restaurants are open for Thanksgiving day, we thought we'd gather some recipes below so you can try them out at home.

2 ½ Lbs Turkey Breast

Salt and Black Pepper

1Tsp Sugar

1 Tbls Grape Seed Oil

1 Tbls Olive Oil

4 Cloves Garlic (Unpeeled)

1 Leek

1 Small Onion

1 Sprig Sage

1 Sprig Rosemary

3 Tbls AP Flour

8 Tbls Crack Black Peppercorn

1 Tbls Green Peppercorn

2 Tbls Cognac

2/3 C Turkey Stock or Chicken Stock

Sea Salt

1/3 C Crème Fraîche



Instructions: Season the turkey with salt, pepper, and sugar. In a medium roasting pan, heat the grape seed, and olive oil over medium high heat. Add the turkey and sear for about 6 to 7 minutes or until golden brown on all sides. Add garlic cloves, onion, leek, rosemary, and sage. Cover, and place in the oven at 300˚F. Cook for about 1 hour, basing the turkey every 20 minutes until the turkey breast reaches 160˚F. After the turkey breast is cooked let the turkey rest, still covered, for 15 minutes. Remove the roasting pan from the oven, wrap the turkey breast in a aluminum foil, and return to the oven on a baking sheet to keep warm while you start the sauce. Place the roasting pan over medium heat. Add the flour with any remaining fat in the pan and let it cook for 3-4 minutes. Add the cognac, stirring with a spatula to dissolve any flour, juices or browned bits clinging to the bottom or sides of the pan, and simmer until the cognac has evaporated. Add chicken stock and bring to a boil and then season with salt and pepper to taste. Lower the heat to medium and, with spatula, push down on the garlic to extract their flavor. Add crème fraîche, stir, and simmer for 2 minute. Strain the sauce through a mesh strainer into a small pan. Season with coarsely crushed black pepper and green peppercorn, and then return to a simmer to thicken slightly.
