Update on the butternut risotto...My copy of The Modern Vegetarian arrived yesterday...beautiful book, stunning photography, terrific recipes. *****Highly Recommended.

Here's the secret to making great restaurant style fried rice that I learned from a hong kong chef when I was working there. The number one problem many people have is that the rice come out too mushy. Here's the fix.

First you boil the rice via stove top or rice cooker. When it's done, let it sit and cool down. Once cooled loosen up the rice with a spoon or with your hands so it doesn't clunk together. Then you put it in the fridge overnight. This way the excess moisture will be sucked outta the rice overnight. The next day sauteed the ingredients first before adding the rice, then add spices and beaten eggs last.

If you want 5 star hotel style tasting rice, make some chicken stock, use that instead of regular water to initially cook your rice. When you finally sauteed the rice you will smell the difference... (warning if you gonna buy canned stock from the store make sure you get the plain kind, don't get too fancy and use the garlic flavor one, you'll be cleaning the smell from your kitchen for awhile...)

I never understood why people complained their fried rice turned out mushy. I always made my fried rice with left over rice from the fridge and it always was perfect. Not by design mind you, but just as a way to use the rice. Plus it makes a good quick meal. The one time I did make it with freshly cooked rice I ended up with a big blob of starch, vegetables, pork, eggs, and soy sauce. I never make it without refrigerated rice now.

I just finished eating some Fried PankoTofu made at home. It was fabulous! I lived in Korea for a year and didn't have any Tofu while I was there, except in Japan, but that looks great! Bulgogi was my Korean favorite.

LOL! I'm a beginner cook and have turned out some AWESOME meals. Unfortunately, it's devoured while standing in the kitchen around the pan, while I enjoy the "ooos and ahhhhs" of approval. I take it as a compliment.

My Korean wife makes that tofu every week, except she puts hot pepper flakes in the sauce without the ginger. You can experiment all you like because you'll never change the taste of the tofu.

If you have time, could you type out your wife's recipe? All the prep steps? I'm trying to wean my husband off eating so much meat and I'm not great at working with tofu.

The homemade pizza looked great. I use Naan bread instead of pizza dough....mainly because its easier. The enchiladas look tasty as well. OK now I'm hungry.

I like eating tofu, but this is my first time to see a tofu dressed like that. Normally I eat tofu marinated for about 3 to 5 minutes with vinegar and soy sauce.

By the way anyone here who has a clear understanding of what fruits to eat to keep our body glowing. Check this out just in case you found it interesting.

OK, remkblydomestic, the Butternut Squash and Risotto drew me in. Searched and found The Modern Vegetarian: Over 120 Recipes to Wake Up Your Palate by
Maria Elia. I did "look inside this book" on Amazon, and the index includes not only the risotto, but Butternut Squash Samosas. Yeah, "One-Click". It'll be here in 2 days, and I can't wait! Thanks for the tip!
