As part of Grist.org's DIY junk food series, Umbra Fisk shows us how to make our own kale chips, a tasty, healthy, organic alternative to their potato cousins. This recipe is Inspired by the author Michael Pollan's book Food Rules, in which he writes, "eat as much junk food as you want as long as you make it yourself." We loved the last recipe for DIY Twinkies and these look tasty too!

First had this recipe at a vegan friend's house and fell in love with it. My recommendation: add some sesame oil and chili oil for and extra kick.

Kale chips are great. Sea vegetables also makes really good chips. Dulse is my favorite. I always take some on the plane with me when I travel. Since they are rich in iodine, eating them protects your thyroid from the elevated radiation exposure of high-altitude flight.

Non organically grown Kale has some of the HIGHEST amount of pesticide residues that are bad for you and kids. So try to get the organic.

I'm not a vegetarian, but I LOVE kale and that was truly disgusting.

Interesting.

I am addicted to crunchy fried spinach. It makes a horrid mess, though. My absolute favorites are sweet potato and taro chips.

my thing is sweet potato fries with a dipping sauce made of pureed Major Grey's Chutny and the appropriate amount of water.

Second on the sweet potato chips/fries. Sweet potatoes are among the most nutrient-dense vegetables, and of course they taste great!

It takes some time but fried chickpeas is my favorite snack, just soak some dried chickpeas in water over night, split in half, and fry in hot oil till they float. You can choose the seasoning, I like to toss them in some pepper sauce.
