With all the hype surrounding KFC's meaty and breadless "Double-Down" sandwich, it is only natural that vegetarians (and those who don't dig heart attacks) felt a bit left out. Fortunately, a Chicago DJ and his girlfriend came up with a tasty solution.

Chicago's DJ Intel, a pescatarian, decided to create his own version of KFC's sandwich that substitutes chicken for bread, and Gapers Block tipped us off to Intel's girlfriend's food blog--where she shared the recipe.

"Anyone on the net or well... anyone living knows about the meat monstrosity called the KFC 'Double-Down.' Well I am a Pescatarian ( mostly vegetarian but I include fishes in my diet) and this meat medley was not in the cards for me and really I had no desire for it," Intel's girlfriend Crystal Pistol wrote on her new blog titled "Snackin in the City."

Crystal wrote that Intel went to the grocery store and was picking up "peculiar items." When she questioned him about it, he said, "Hey we deserve to dream too, don't we?"

Intel shared his grocery list on his blog:

* Spicy fake chicken patties (available from Boca)

* Fake Bacon (Morningstar has a great version)

* Pepperjack cheese

* Monterey Jack cheese

* Honey mustard

Cook the faux meat according to package instructions and slap it together. The results?

Crystal wrote: "OMG we both wanted another!"

As for Intel: "You're welcome America."

Omaha was one of the test markets for the KFC Double Down sandwich. Soon as I found out it was available, I took straight off from work and bought one.

First thing that caught my attention was the weight- or rather, the heft. This fairly small sandwich- the diameter of a slightly larger than regulation hockey puck, it seemed to me- felt like a brick in my hand; dense.

The last thing that caught my attention was the taste.

Look. I like the taste of pressure fried Original recipe Kentucky Fried Chicken. I like bacon and cheese and mustard. But putting all of those rather oily and fatty tastes in my mouth at the same time felt...

Well... clotted. Over saturated with mushy and greasy sensations. Like opening a door and walking straight into a bland-out.

Which is probably what it's like to be inside Sandra Lee.

But it's not exactly appealing to the mouth. I am not sure why anyone would want the original, let alone a fake meat version...

This gave me a craving for my favorite veg burger which I recently invented:

1 cup mung beans sprouted about a day so they're still small
1 egg
about a quarter cup of Italian bread crumbs
about a quarter cup of sauteed chopped onions

Mix all these ingredients together in a bowl, shape into a patty and fry. Add any seasonings and toppings that you would to a hamburger. The texture is EXACTLY like a burger.

Ridiculous. What is "unhealthy" about the double-down is the breading and the processing of the meat and cheese and the sugary "Colonel's sauce." If the chicken were free-range organic and the cheese real unprocessed dairy, the double-down would be reasonably healthy, so why not make an organic and real cheese version? Meat is not your enemy.

this make about as much sense as the original. it's all over processed food = bad for u. and it just makes me fart. a lot. like I'm on a date and I can't enjoy it because I have to, well you get it.

I won't be having KFC's Double Down, but I also won't be eating this version made with genetically engineered and Roundup Herbicide saturated soybeans that Boca and Morningstar use. Also, to make tofu out of soybeans they use caustic soda and sulfuric acid.

See, just because it's made of soy doesn't make it organic or natural. Here is one link about it but there are many links from other sources that back it up. This is Frankenfood.

Most veggie burgers have too much carrot in them (too sweet) and a mushy texture. The black bean ones you can buy at Costco are not too bad and have a spicy kick.

Maybe they meant "soy" cheese ;-)

I will say though once again NECESSITY I THE MOTHER OF INVENTION and I am likely to make one today!

Apparently the definition of vegetarian can be expanded to include dairy, eggs and fish...

and processed foods.

Sounds like they're not vegans.

I wonder why they used Boca's faux-chicken patties, though. Morningstar's have much better texture & flavor.

because that texture and flavor comes from being more processed .. and you can get organic boca which means no GMO

Some vegetarians eat dairy.

The definition is rather broad.

I would rather eat meat than fake meat.

I also prefer not to eat overly processed foods.

Off topic. I LOVE CHICAGO! Most beautiful city in the US. Wonderful people. Great food. I go back every chance I get.
