You don't have to be fancy and high-tech or buy carbon offsets to be 'green'. For a few thousand Euro the solar panels on my main restaurant produces most of our electrical needs. We buy everything we can local to reduce transportation (getting much better quality in the process). We bring in everything in reusable containers, so no packaging waste. Even though there is not a recycling center in the country, we save join with other to self-transport glass, plastic and a minor amount of cardboard to a center in Romania. All vegetable waste is composted and used in local gardens. Meat waste is 'donated' to the thousands of stray dogs. Our first rinse water is recycled to wash the patio or walks, final rinse recycled, and along with low volume toilets, our water consumption is down 50% in a year. Our final waste won't fill up one trash can every 3rd day.

Absolutely commendable. We all should B doing likewise. It is truly so simple yet we don't do it. There is a need 2 get out N the communities and schools like Jamie Oliver did regarding natural food versus processed. ThankU 4 helping save our environment. I live the life I hope others will B able 2 Njoy.
