Via NY Times: Do you miss old Hollywood restaurants like the Brown Derby or Chasen's? More specifically, do you miss their desserts? Valerie Confections in Los Angeles has re-created four signature cakes that were staples at the Brown Derby, Chasen's, Bullock's Wilshire, and Blum's - all classic Los Angeles restaurants that have shuttered or demolished and replaced with mini-malls, schools, hotels, and grocery stores.
Valerie Gordon of Valerie Confections started experimenting with these vintage cakes when the LA Times approached her about re-creating Blum's Coffee Crunch Cake for a special story on wedding cakes. After the piece was published, Valerie was stunned at the reaction:
...Absolute mayhem. The phone would not stop ringing with orders. The level of gratitude and emotion was overwhelming, and it got me thinking about how important these 'extinct' desserts were to people.
Valerie also noted that the recipes of yesteryear had to be re-adjusted for today's palate:
I have to do about ten passes with each cake before it seems like a delicious, logical representation of what was originally served.
Let's hope she keeps experimenting and bringing more Los Angeles vintage cakes to life.
