One of New York's most renowned chefs is bringing his star power to Denver, opening an Asian Bistro in LoDo this week. Chef Lon Symensma's ChoLon Modern Asian Bistro, inspired by the Chinese-influenced ChoLon marketplace in Vietnam, will have its grand opening tonight and be open to the public tomorrow, October 5. ChoLon will be located on the corner of Blake and 16th Streets in the SugarCube building.
Chef Symensma is an Iowa-native and was invited at the age of 19 to join Team USA at the 1996 Culinary Olympics. He's led the kitchen in Stephen Starr's Buddakan restaurant in New York's Meatpacking District and worked in French Chef Jean-Georges Vongerichten's kitchen. The young chef has also taken extensive trips to abroad to further his knowledge of Asian cuisine.
Symensma told 5280 he left New York to be a part of Denver's growing food culture.
