Food52's Best Cauliflower Recipes

First Posted: 10/18/10 05:03 PM ET Updated: 05/25/11 07:05 PM ET

For the past year, Food52.com readers have been voting in weekly showdowns of reader-submitted recipes on a given theme. The winning recipes of each week will end up in Food52's upcoming cookbook, along with bios of the people who submitted them (Food52 explains the process in simple detail here).

Food52 and its co-founders Amanda Hesser and Merrill Stubbs have invited HuffPost Food readers to vote on the contest for week 4 (of the second year, and the second book).

Week 6's showdown is for the best cauliflower recipe.

Check the finalists out below, and vote for your favorite here.

Roasted Cauliflower with Gremolata Bread Crumbs

Amanda and Merrill's notes on Roasted Cauliflower with Gremolata Bread Crumbs on Food52.com:

Before TheThinChef came along, roasted cauliflower and gremolata happily co-existed, never feeling any need to mingle. But now that we've tasted them together, they're going to be seeing a lot more of each other in our kitchens. The lemon and garlic scented panko add snap and complexity to the sweet, caramelized cauliflower -- and together you have a side dish that you could easily double or triple for a large party, and even make ahead. In fact, we like this best at room temperature, which has an added benefit: if you wait until the cauliflower is cool to sprinkle the bread crumbs on top, they'll stay good and crisp! - A&M

Marinated Cauliflower

Photo: Sarah Shatz

Amanda and Merrill's notes on Marinated Cauliflower on Food52.com:

Kayb's sweet and tangy marinade is just what raw cauliflower needs to transform it from a humdrum crudité to a zippy accompaniment for barbecue, or even a simple hors d'oeuvre all of its own. Cider vinegar and sugar are tinted a psychedelic yellow from a combination of ground mustard and turmeric, which adds earthiness and a hint of spice. - A&M

I love most anything with gremolata (parsley, garlic & lemon zest). Can't wait to try that cauliflower dish.

I've been roasting cauliflower for a couple of years. Olive oil, garlic, salt, cracked pepper, @ 400 on a cookie sheet until it browns and is soft and it is delicious. My husband would not eat cauliflower until I did this and he loves it now. Roasting changes the flavor entirely.

roast one head cauliflower with 5-6 cloves garlic in the oven till the cauliflower is very soft and caramelized. when done, in a blender or food processor, blend with one can cannellini beans (drained & rinsed) and add just enough EVOO to let it blend smoothly, salt & pepper to taste. enjoy as a dip, a sandwich spread, on crostini with sundried tomato....yummmmm

We had roasted cauliflower tonight, no bread crumbs needed, just a bit of olive oil, some herbs, and a little salt. The cauliflower was an organic orange variety, making it as pretty as it was tasty. Roast at 400 degrees F for 20 minutes in a cast iron pan, flipping the cauliflower half way through roasting. Mmmmmm. I need to go buy more cauliflower.

We make a sauce with non-fat plain yogurt, mayo, dijon mustard, white pepper and dill. Pour it over steamed cauliflower, sprinkle a little cheddar cheese over it and bake it for 15-20 minutes (just until the cheese melts and it's a little bubbly. DELICIOUS!

Traditional basil pesto? Hmmmm. I'd made a sorrel pesto tonight for fish that my husband added to his roasted cauliflower. He thought the tart really balanced the sweet of the roasted cauliflower.

We love cauliflower in almost any form but one quick way is to saute it in butter or olive oil until cooked and then sprinkle with salt and pepper. Mmmmmmmm!
