Everyone's Hanukkah traditions vary, but most can agree on the importance of good potato latkes, sufganiyot (fried jelly doughnuts), gelt for all, and kosher wine. Some opt for brisket (the longtime favorite cut of the Jews), blue-sugar-sprinkled butter cookies, the occasional babka, and even borscht.
Covering all these touchstones in approaches both classic and tradition-bending (apricot gelt, manischewitz granitas, anyone?), are the recipes below. If we're missing your favorite approach to one of these classics or a different dish altogether, add it to the slideshow by clicking the 'Add a Slide' button below.

The absolute most perfect use of potatoes, better even than French fries, is to turn them into potato pancakes, which have crunchy mahogany edges, crispy golden midsections, and tender, rich, meaty interiors. They are hash browns on steroids.

Positive change is afoot in the kosher world. Today, more people are increasingly concerned about the food they eat, where it comes from and who is making it. They want to be assured that it is clean, fresh, safe and healthy.
On the fifth and sixth days of Hanukah, Rabbis for Human Rights will hold its biennial conference. At this conference, rabbis, lay leaders, and Jews of all backgrounds will learn about pressing human rights abuses.
In a world that is changing so rapidly, religion provides comfort, continuity and timeless certainty to millions of the faithful in the world. But often that religious package also includes heavy doses of triumphalism, chauvinism and intolerance.
On Wednesday morning, as the Jews of America prepared for the beginning of the holiday that evening, the New York Times published a rant against Hanukkah. Jews reacted with puzzlement, dismay and not a little anger.
This year, I was praying for a modern miracle -- making a good potato latke without using self-rising wheat flour. It was surprisingly easy to go gluten free and still enjoy this family favorite!
What do we have in common with Judah Maccabee? A potential for heroism. In an age when people question whether there really are heroes anymore, Hanukkah reminds us that there are always heroes.
The very best latkes that I have ever had are the sweet potato latkes by the famous Brass Sisters from Cambridge, Massachusetts. This is their grammas' recipe and they pronounce them LOT-keys, as did their Russian and Polish grandmothers.
Noodle Kugel! We had lots of Jewish neighbors when I was growing up. One, Mrs. Heller, used to send over Noodle Kugel whenever my sister or I wasn't feeling well. We all loved it. When my mom sent me to return the casserole dish and thank her, she'd always say, "I'm glad you liked it James. I made it with my feet!" I've tried making it a few times, but it never tastes as good as hers.

With this year's proximity of Hannukah to Thanksgiving, I found that my homemade cranberry sauce makes a great topping for latkes. It's much better than apple sauce. (It could be the Grand Marnier I add to the cranberries...)
