Leg of Lamb with Garlic Sauce

A classic leg of lamb at first glance, this recipe by ChefJune has several details that elevate it from the mundane to the exceptional. The leg is larded not only with garlic, but with pieces of anchovy as well, which lend a rich brininess to the meat. A generous crust of herbs renders the meat fragrant, while a simple sauce of sauteed garlic (24 cloves!) and red wine, mixed with pan drippings, makes the dish even more juicy and robust. Make sure to test the temperature frequently towards the end -- the last thing you want is 5 pounds of overcooked lamb!

Standing rib roast studded with garlic and served with a horseradish and whipped cream sauce, dauphinoise potatoes and a beautiful spinach salad w/golden raisins along with homemade rolls. Dessert is a mincemeat and cheesecake pie with various fudge, cookies, etc. Bon appetit!

Blackberry cassis goose adorns my Christmas table each year along with a pecan herb crusted standing Rib Roast with cranberry gorganzola butter.

pork and apples! I rub my pork with salt pepper spice (cheap herbs de provence works fine) let it sit, then brown it and braise it in cider with slices of apples and onions. when the pork is done cook down the cider to make a fab glaze. overly simple and the star of any holiday dinner.

Picked up a leg of lamb for our Christmas roast on Saturday. My mouth is now watering and I can't wait to cook it up. (I should really stop reading these kinds of articles when I'm hungry and pregnant!)

you can find the recipe on line. It's a traditional popover like puffy bread to go with beef usually made with the drippings.
