[Thursday] night, avant-garde mixologist Eben Freeman, formerly of the restaurant Tailor and currently Director of Bar Operations & Innovation for Chef Michael White's Altamarea group, will guest bartend at West Village bar pop-up Fatty Johnson's. He'll bring back The Waylon, a favorite among cocktail nerds from his Tailor days. The formula for the drink is fairly simple--smoked-infused coke, water, and bourbon. But the technical, homebrew contraption that Freeman constructed himself to make the drink possible is where the bartender's ingenuity shines.
