The best way to pair wine and chocolate is to not do it. This pairing has been a canard of the wine makers for years -- ick. Two good things do not always make a third better thing. If you do want to have them at the same event just have the chocolate after you are done with the wine --- in the way to the bedroom.

when i make my semisweet chocolate ganache (served with fresh fruit and angelfood cake chunks), i serve chilled Moscato d'Asti. my wine guy turned me on to it years ago and it is a huge favorite to everyone who has had it.
