One Pot Kale and Quinoa Pilaf

Deensiebat's pilaf breathes new life into a familiar classic. Both the quinoa and the hearty strips of lacinato kale (you can use chard or standard kale) crunch lightly between your teeth, and Meyer lemon juice and zest keep the quinoa from being bland. Fresh goat cheese and walnut oil just barely coat the warm pilaf, giving it a creamy, tangy finish, and toasted pine nuts lend some crunch. We love the technique of layering the quinoa and the kale and cooking it all in one pot. - A&M

THANK you!!! Vegetarian cooking for guests can be daunting for one who doesn't do it that much. Some of these are a little too artistic for me but some I can definitely use to please the visiting palates.

Please include some of Anupy Singla's "The Indian Slow Cooker" recipes!!! They are recession busting, diabetes defeating, cancer killing, miracles that only take minutes to prep and pennies to pay for!!

Why do some people feel so threatened by Meatless Monday. It's not like the government is making you do it. Nobody is making anyone do this.

It's just a way for some people to contribute to a cause that they believe in. What's so bad about that?

OK I'll try posting in the food section, hope it gets through.

The kale and quinoa looks really good to me, but I am also a sucker for sauteed radishes (however weird that sounds). I guess this is where my Native American and Austro-Hungarian roots meet.

My husband and I had our very first official Meatless Monday last night:

Homemade pesto on imported angel hair pasta with deep fried brie wedges.

the goal is to get people to stop eating meat by easing them into it, or at least to reduce meat consumption.

Back when I raced bicycles I dated a hardcore vegan. I got so frail eating strict vegiterian even when doing amino and protein supplements that she made me eat eggs and fish :)

I know some endurance athletes that are vegan. I guess it all has to do with your body makeup, etc.

I don't know why the meat eaters gets so defensive whenever there's a post about vegetarian food. There's nothing confrontational or preachy about the way these recipes are presented, yet the comments are full of meat eaters either questioning or ridiculing vegetarians or bragging about how much meat they eat. It's so weird.

Yea well we are not herbavours either. Hence we are omnivours.

We are both and it is a choice. However many out there and I do not know if your one. Want to deride and stop people from eating meat at all. You eat your garden and I will eat what I see on 4 legs, 2 legs, swiming etc. Just saying ;-}
