Patrick Connolly of Bobo in Greenwich Village explains, "it's great to say your produce came 50 miles from here, but to say that it came from the roof above your apartment building, that's even better."

Anastasia Plakias of Brooklyn Grange Farm says rooftop farming grew out of necessity.

"No matter how much space you have, there's always a need for more produce," Plakias says. "The beauty of an un-utilized space is, you're not in competition with developers for that space."
