Is cocktail culture losing its buzz? Last fall, the San Francisco Chronicle reported that bartenders were mixing up a host of cocktails with a lower alcohol content -- drinkers are looking for beverages with fewer calories, and a lower alcohol level also means patrons can consume more without fear of the breathalyzer. The trick behind many of these cocktails? Fortified wines, which are substituted for stronger spirits.

as a bartender, i have been doing this of my own volition for awhile now. i just get tired of women sending cosmos and other drinks back because they are too strong, so i make them weak. everybody's happy.

As a former bartender I mostly saw people drink to achieve their desired level of intoxication.
Be that 2 Martinis or 4 beers or whatever.

Some certain bars may see an increase in these recipes, but my guess would be that it's more like a fad like so many past popular drinks.

Of course. Change the recipe, not the behavior that leads to an undesired result. But hey, if it works and people are happy, why not? One thing that should make the bars happy is that the drinks could cost less to make and result in increased profit. So yeah, why not?
