Look, trophies are great, but whether they take the full measure of a rack of ribs is highly debatable. There are a zillion contests out there. Memphis in May, which just concluded, is one of the oldest and, arguably, the grandest. It bills itself as The World Championship.

'the proof is in the pudding'. having traveling to the carolinas on bus. trips years ago, i think i know a wee bit about good 'Q'. here in chitown, i have visited many so-called award winner 'Q' joints. most serve up par boiled to death ribs, that are mushy and have little flavor, and hide it with gobs of heavy sauce. one place i did find is called 'smoque'. they serve their ribs with the sauce on the side. can't hide anything that way. the ribs are moist, have a great texture, and the sauce is more like a dipping sauce. closest i've found to the carolina Q
