How about Donkeyskin, where the queen, on her deathbed, begs her husband never to remarry except to someone as beautiful as she. Of course, several years later, there's only one woman in the kingdom as beautiful as the queen - her daughter. Robin McKinley did a wonderful novelization of it called Deerskin.

I read that recently - beautifully written!

But then, I think just about anything by her is well worth reading.
