In the Pantry Challenge video series, Lauren Braun Costello -- chef, author and food stylist -- shows busy moms how to make meals using ingredients they already have in their pantries, solving their unique cooking challenges. In this episode, Lauren shows Aimee R., a mother of two and a PR executive, how to incorporate a sweet ingredient (brown sugar) into a savory snack.
This recipe will work with virtually any type of nuts, but Lauren chooses to use a variety for her mix. She starts by melting butter together with brown sugar and Worcestershire sauce. (The Worcestershire sauce is what gives the nuts a rich, savory undertone.) You want the sauce to bubble a bit to ensure the brown sugar is incorporated, then add salt, pepper, chopped thyme, and chopped rosemary. She takes it off the heat, then pours it over the nuts and stirs everything together to coat.
She spreads the nuts into one even layer on a foil-lined baking sheet, then bakes them to bring out the flavor. While they're still warm, she sprinkles a bit of salt -- and then they're ready to be enjoyed!
