Mixed Berry Cobbler

In the Pantry Challenge video series, Lauren Braun Costello, a chef, author and food stylist, shows busy moms how to make tasty, healthy meals using ingredients they already have in their pantries, solving their unique cooking challenges.

In this video, Lauren shows Jennifer C., a busy mother of two and P.R. professional, how to make a dessert that's easy enough for a novice baker -- a cobbler with quick oats, which would please both her dessert-loving husband and young children.

Lauren first shows Jennifer how to make the berry mixture -- using blueberries, blackberries, strawberries and raspberries, and then adding lemon juice and sugar (for a tart-sweet balance) and flour (to help bind the ingredients). She then prepares the crumb topping, made of butter, brown sugar, a bit of flour, quick oats and cinnamon. She mixes the ingredients with her hands -- a messy step that any young child would be happy to assist with. Lauren points out that dark brown sugar is best due to its extra molasses flavor, but says that regular brown sugar will work fine as well. Then the last step: The berry mixture is added to a buttered baking dish, covered with the crumb topping, and then baked in the oven. In less than 20 minutes, the mixed berry cobbler is ready to be served -- preferably with a topping of ice cream.
