Turkey Sloppy Joes

In the Pantry Challenge video series, Lauren Braun Costello, a chef, author and food stylist, shows busy moms how to make wholesome meals using ingredients they already have in their pantries, solving their unique cooking challenges. In this episode, Lauren shows Aimee R., a busy mother of two and P.R. executive, how to make a quick one-skillet dish for easy clean-up using stewed tomatoes.

One of Aimee's favorite dishes to make for her family is chili with macaroni. For a healthier spin on this hearty classic, Lauren decides to whip up some turkey sloppy Joes -- the dish has leaner meat, gains flavor from stewed tomatoes, peppers and onions and can be pulled together in 15 minutes. She starts off by cooking the peppers, onions and two pounds of ground turkey in olive oil. If you're worried about whether the meat will cook thoroughly enough in the time it takes to soften the vegetables, don't be -- it only takes about five minutes to cook the ground turkey. You'll know the meat is thoroughly cooked once its pink color fades.

Next up, she adds her sauce to the pan, starting with the stewed tomatoes from a can. She drains the can slightly and breaks up the tomatoes a bit using her hands. (This is a great step in which to involve kids who love to get their hands messy.) She then adds ketchup, brown sugar and Worcestershire sauce -- adding a balance of sweet and savory flavors -- and then cider vinegar, which brightens the dish. Finally, she seasons the mixture with salt and pepper, lets it simmer for 10 minutes, and then fills potato rolls or hamburger buns to create the turkey sloppy Joes. Heed her warning: This dish is delicious, but messy.
