In his series Marcus' Kitchen, chef Marcus Samuelsson shares dozens of recipes that prove "American" cuisine is really a delicious melting pot that draws upon flavors from all over the world.
In this video, Marcus celebrates our favorite fall fruit by combining it with potatoes in a part hot, part cold salad. For the hot portion, he sautées potato cubes with ginger and garlic, before adding onions, almonds, and half of the apple chunks. He then combines this piping hot mixture with his cold ingredients: mayo, sour cream, onion, lemon juice, Parmesan cheese, capers and the rest of the apple chunks. With a medley of textures and flavors, this far from ordinary salad would make a delicious light meal or side dish.
