In his series Marcus' Kitchen, chef Marcus Samuelsson shares dozens of recipes that prove "American" cuisine is really a delicious melting pot that draws upon flavors from all over the world.
In this video, Marcus -- always a lover of spices -- creates a rub of red pepper, paprika, oregano, salt and pepper,and applies it generously to catfish fillets. The strips are then cooked on high heat in a cast iron skillet with a mixture of oil and butter (the mixture helps the coating become very dark without burning). A final addition of lemon wedges to the pan rounds out the lively flavors and completes this hot and zesty meal.
