Bacon Braised Brussels Sprouts

- Cook bacon in a 10-inch heavy skillet over moderately low heat, turning, until crisp. Transfer to paper towels to drain. Add Brussels sprouts and a pinch each of salt and pepper to fat in skillet and cook over moderate heat, stirring occasionally, until browned, about 3 minutes. Add water, then simmer, covered, until tender, about 5 minutes. Crumble bacon over Brussels sprouts and toss with salt and pepper to taste.
