- Begin by preheating your oven to 350 degrees F and spray 2 muffin tins with non-stick cooking spray.
- In a medium-sized bowl, beat the egg white and sugar until fluffy and then stir in the mashed banana. In a separate bowl, add the bicarbonate of soda to the applesauce, let if froth for a minute, and then add it to the banana mixture.
- Gently fold in flour to banana mixture, add water and mix.
- To bake, pour the batter equally in the muffin tins and cook for 15 to 20 minutes, or until a toothpick inserted into the center or muffin comes out clean. Instead of pouring the batter directly into the trays, try using cupcake-style liners for more decorative muffins.
