  • Slice unpeeled cucumbers into 1/4 inch thick slices. Combine cucumbers, onions and salt in a large bowl. Cover with about 2 inches of ice cubes and refrigerate for 3 to 4 hours, adding more ice as needed.
  • Drain vegetables in a colander under cold water. Add sugar, vinegar, cloves and spices in a large pot over medium heat and bring to a gentle simmer ? but do not boil. After 10 minutes add the cucumbers, bring back to a gentle simmer and remove from heat.
  • The pickles will keep for a week covered in the refrigerator. Otherwise, you can preserve them by pouring the hot mixture into jars and sealing in a hot water bath.
