This is probably one of the quickest fish dishes you’ll ever make--smokey heat from chipotle hot sauce melds with creamy mayonnaise giving tilapia a bubbling topping that will satisfy everyone around the table.


  • 6 Tbsp mayonnaise
  • 3 Tbsp finely chopped scallion greens
  • 1 Tbsp chipotle Tabasco
  • 1 1/2 lbs tilapia fillet (about 6)
  • 4 lemon wedges


  • Preheat broiler. Line rack of a broiler pan with foil, then lightly oil.
  • Whisk together mayonnaise, scallion greens, and Tabasco. Pat fish dry, then put on foil and lightly season with salt. Spread fish evenly with topping and broil about 8 inches from heat until topping is bubbling and golden and fish is just cooked through, 6 to 8 minutes. Serve with lemon wedges.
