In this simple, healthy salad, raisins add extra color and sweetness to complement the honey. This is especially good with fish, and casual dishes like hot dogs, and hamburgers.

Ingredients

  • 1/2 small red cabbage, thinly sliced
  • 1/2 small green cabbage, thinly sliced
  • 2 carrots, coarsley grated
  • 1/4 cup rice wine vinegar
  • 2 tablespoons canola, sunflower, or other light oil
  • 2 3 tablespoons honey
  • 1/4 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup raisins

Directions

  • Put the sliced cabbage in a bowl with the carrots. In a small bowl, combine the vinegar, oil, honey, salt, pepper and raisins and mix well. Pour the mixture over the cabbage and carrots and toss well to coat.
