- Line a sieve with a large, round, coffee filter or a double layer of cheesecloth. Put sieve over a bowl deep enough to allow yogurt to drain.
- Spoon yogurt into sieve. Cover bowl and sieve completely with plastic wrap. Refrigerate. Let yogurt drain overnight.
- Discard yogurt draining. Place thickened yogurt cheese in another bowl and refrigerate. Covered yogurt cheese will keep for two weeks in refrigerator.
