Mango Shrimp and Crab Salad

  • Arrange spinach or lettuce on four plates.
  • Arrange 1/4 of mango slices onto each plate.
  • In a small bowl, combine shrimp and crab.
  • Mound the shrimp-crab mixture on top of the mango.
  • Top each with divided celery and green onion.
  • Arrange cucumber slices and tomatoes along the sides of lettuce.
  • Slice lemons or limes into wedges and place on plate.
  • When you serve salad, allow each guest to squeeze the wedges over top the salad.
  • **If you prefer crab or shrimp over the other, use twice as much of one.
