Nothing calls the beach to mind like a cool, sweet drink made with pineapple and coconut. You can add a splash of rum for the grownups.
Ingredients
- 2 (6-ounce) containers low-fat or non-fat vanilla yogurt
- 6 cups fresh or canned pineapple chunks
- 3 cups pineapple juice
- 1/4 cup granulated sugar
- 3 teaspoons coconut extract
- 4 cups ice cubes
- Garnish: drink umbrellas or pineapple wedges skewered on a toothpick
Directions
- Add 1½ cups yogurt, 3 cups pineapple, 1½ cups pineapple juice, 2 tablespoons sugar, 11/2 teaspoons coconut extract, and 2 cups ice cubes to a blender and blend until smooth. Repeat with remaining ingredients for a second batch.
