Roasted Chicken Thighs with Herbed Goat Cheese Stuffing

Ingredients

  • 4 chicken thighs with skin and bones
  • Sea salt and freshly ground pepper
  • 1 3-4 ounce cylinder goat cheese
  • 1/4 cup fresh herbs, choppped
  • Olive oil, for drizzling
  • Mashed winter squash or pumpkin enriched with butter or cream and flavored with mustard seeds, for serving
  • Watercress, for garnishing

Directions

  • Preheat the oven to 425ºF.
  • Wash, dry and season the chicken. Mix together the cheese, herbs and garlic. Carefully lift the skin of each thigh then push under the cheese mixture.
  • Arrange the thighs in a single layer on an oiled baking pan then drizzle with oil. Roast for 25 minutes or until tender and golden.
  • Serve with the Hubbard-squash mash and garnish with watercress.
  • For special occasions: Try fresh duck breasts instead of chicken.

Doesn't look all that appealing. Here's what I'd do to make a chicken and herb goat cheese stuffing. I'd use pounded thin sliced boneless, skinless chicken breasts. I'd mix the goat cheese with fresh chopped rosemary, thyme & basil (or any fresh, chopped herbs of choice), and chopped roasted pecans. Place a spoonful on each breast and roll them up. Dip in beaten egg or egg white, then into a mixture of whole wheat bread crumbs & almond meal/flour. Hold together with a toothpick. Fry them to a nice golden brown on all sides. Serve with a baby spinach salad with dried cranberries, walnuts, red onion and home made balsamic vinaigrette. OR... try some whole wheat orzo tossed with steamed broccoli, crushed fresh, garlic, olive oil, s&p.

What kind of "fresh herbs"? How much garlic? The recipe sounds delicious, please finish it!
