Rosemary and Garlic Rub

  • 1 tablespoon minced dried garlic
  • 2 tablespoons dried rosemary
  • 2 tablespoons kosher salt, preferably Morton
  • 2 tablespoons sweet Hungarian paprika
  • 2 tablespoons hot or sweet smoked Spanish paprika
  • 1 tablespoon whole black peppercorns, toasted


  • In a medium bowl, combine the garlic, rosemary, salt, and both paprikas; stir to mix. Place the peppercorns in a spice grinder and pulverize until they have an evenly coarse grind. Add the rest of the rub and grind again, just to combine. The rub will keep in an airtight container for up to 6 months.
