Delicious! I made it with crumbled Mexican chorizo instead of spanish chorizo and it came out great. I also used two chicken breasts and 2 chicken thighs instead of 8 thighs (made it a little healthier) and tossed the rice into the mixture in the pan, letting it stew for the last 5 minutes. Serve with warm corn tortillas for a nice Mexican comfort food dish.
