Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoon sherry vinegar
  • 2 teaspoons balsamic vinegar
  • 1/4 teaspoon kosher or sea salt
  • 4 cups baby spinach leaves
  • 3 ounces Gruyere cheese, cut in 1/2-inch cubes
  • 1/4 cup dried cranberries
  • 1/2 cup chopped walnuts plus 10 to 12 walnut halves

Directions

  • In the bottom of a salad bowl, using a fork or whisk, mix together the olive oil, the 2 vinegars and the salt. Add the spinach, cheese, cranberries, and the chopped walnuts. Toss the salad to coat well, then garnish with the remaining walnuts.
