Soy sauce, mirin, brown sugar, garlic and ginger combine in this teriyaki-inspired marinade for grilled chicken or pork chops.

Ingredients

  • 1/2 cup reduced-sodium soy sauce
  • 1/4 cup sake or mirin
  • 2 tablespoons light brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger

Directions

  • 1. Whisk soy sauce, sake (or mirin), brown sugar, garlic and ginger in a bowl until the sugar is dissolved.
  • Nutrition note: Based on Test Kitchen results, 2 teaspoons of marinade are absorbed per serving.
  • To Make Ahead: Cover and refrigerate for up to 3 days.

When I made this recipe I would take 1/4 cup of this sauce and 1/4 cup of water put in a sauce pan and bring it to a boil. I would thicken this sauce with cornstarch and water and use it as a glaze during the last minute of grilling. Serve with hot rice. You can also make a orange glaze terikayi sauce by adding orange marmalade jam. Delicious!

To really make this good use about 3-4 tablespoons of oyster sauce, one bottle of beer, for the sauce and as many as you want for yourself.
