This substantial dish is perfect with a salad for lunch or with polenta for dinner. Leftovers keep getting better in the fridge as the chicken and beans continue to absorb the lemony vinaigrette.

  • Remove chicken from bones in large chunks, discarding bones.
  • Stir together oil, juice, onion, ¾ teaspoon salt, and ½ teaspoon pepper in a large bowl. Add beans, celery, parsley, and chicken, stirring gently to combine. Let salad sit 5 minutes, then season with salt and pepper to taste.
