White Beans & Orange-Glazed Sausages

Serve the beans and sausages with thin slices of sourdough baguette brushed with olive oil and run under the broiler until toasted. Rub the toasted bread very lightly with a cut clove of garlic.


  • 1 1/4 pounds lean sweet Italian turkey sausage
  • 4 tablespoons orange juice concentrate
  • 2 teaspoons olive oil
  • 1/4 teaspoon pepper
  • 2 cans (19 ounces each) cannellini beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes with Italian seasonings


  • Preheat the broiler. Line a broiler pan with foil.
  • In a shallow bowl, combine 3 tablespoons of the orange juice concentrate, the oil, and pepper. Prick the sausages all over with a small sharp knife. Roll the sausages in the orange mixture (reserve the unused mixture).
  • Broil the sausages 6 inches from the heat for 15 to 17 minutes, or until cooked through and browned. Turn the sausages once or twice as they broil to brown all sides. On the last turn, brush with the remaining orange mixture.
  • Meanwhile, in a medium saucepan, combine the beans, tomatoes, and remaining tablespoon orange juice concentrate. Bring to a low simmer over medium-low heat. Keep warm while the sausages cook.
  • Transfer the sausages to a cutting board and thickly slice on the diagonal. Serve with the beans.
