Once upon a time ago, we ate a bäco. It was in Echo Park at a weird place called Lot 1 Café. Then, like a phantom it disappeared and reappeared at The Lazy Ox Canteen. It's not always available, but we got to eat the bäco because chef Josef Centeno once made it for staff meal, and well, it was damn good. Then, Twitter revealed a new user: @the_baco. It's bio: "I'm a delicious flatbread sandwich created by Josef Centeno." Truth. Like the bäco, the twitter account moved around as well (to @bacomercat), but hopefully both have found a resting spot in Bäco Mercat, a brick-and-mortar shop, .
