Breakfast Polenta with Warm Berry Compote

Ingredients

  • COMPOTE:
  • 1 tablespoon butter
  • 3 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • Dash of ground cinnamon
  • 1 12-ounce bag frozen assorted berries
  • POLENTA:
  • 3 cups 1% low-fat milk
  • 1/2 cup quick-cooking polenta
  • 2 tablespoons sugar
  • 1/2 teaspoon salt

Directions

  • To prepare compote, melt butter in a medium saucepan over medium heat. Add honey, juice, cinnamon, and berries; bring to a boil. Reduce heat; simmer 5 minutes or until thoroughly heated. Keep warm.
  • To prepare polenta, bring milk to a boil in a medium saucepan. Slowly add polenta, stirring constantly with a whisk. Stir in sugar and salt, and cook 5 minutes or until thick, stirring constantly. Serve with compote.

I made this recipe as it was written and it was delicious. I actually used Penzey's vanilla sugar in the polenta and it gave it a slight vanilla taste. Delicious!

This was really good. But the package called for 3 cups water or milk to 1 cup of polenta, so that's what I used and it came out good. Just wondering about your proportions. That seems like a lot of liquid for 1/2 cup of mix. I bought Bob's Red Mill brand. It did not say "quick cooking", but only called for 5 minutes of cooking time. Did I get a different variety than you used?

It does look good!! I am going to store today to get some ingredients!! I have never tried the polenta before....

Hi Liz,
This isn't Polenta, it's Mush! Quaker Oats Corn Meal container used to have, I think it still does, have a recipe on the side for Mush! It is the best. I just use water and corn meal. Then when it's done add milk, sugar, honey, maple syrup, fruit, applesauce, anything you want! I like brown sugar.
A couple of things: When you cook the corn meal be careful. If you have it too hot it spurts and spatters and it's like hot wax on your skin! The other thing, you can add the corn meal early and it makes it smoother or later when the water is hot as mentioned above and it is lumpier unless you keep stirring it. Also, play with the liquid amount, you may not want it this thin.
Polenta on the other hand... that's thick as in thick to slice! Perhaps calling the cereal Polenta sounds fancier than Mush. But for me, I've been having it for over 50 years and it's mush!
It's great on cold days for breakfast or for a quick dinner when you don't want to cook.
